Ramen Noodle Cole Slaw




Growing up I loved Ramen Noodle Soup, I would have probably eaten it at every meal if I was allowed.  When I saw ramen noodle coleslaw I knew I needed to try it, and it did not disappoint.

I found this recipe HERE, but there a lot of different varieties of this recipe online.  This is a low-cal version.

    Ingredients for dressing: 2 tbsp. olive oil 3 tbsp. white vinegar 2 tbsp. Splenda 1/2  ramen noodles seasoning package 1/4 tsp. pepper 1 tbsp. soy sauce Ingredients for salad: 1 small head of red or green cabbage or half of each or bag of prepared cabbage 4 green onions
    1 carrot peeled and grated (or if you use the bag of cabbage then the carrot is already in there) 1 package ramen noodles.


Directions

1. Make dressing by combining ingredients in large bowl and stir to dissolve sugar.


2. Combine first 3 salad ingredients to dressing, toss well. Add crushed ramen noodles and toss again.




3. Serve right away or cover and refrigerate to allow the flavors to blend.

We served the Ramen Noodle slaw as a side to homemade buffalo Bleu cheese  chicken and it was a great side dish.

I recently picked up a pair of Cobalt blue Mossimo Target Skinnys for an awesome price.


I am pumped to wear these.


I am tempted to go back and buy them in purple.





The Gap has a great color wheel of skinnys too.


These colors make me so excited for spring
( only 2.5 more months).

2011 Recap


        It is crazy it is already 2012, as always this past year was busy busy, but wonderful.  I always love looking back at all of my past year experiences. 

This year I finally finished my first knitting project.


Started a Blog!!

Steelers were in the Superbowl




DFH and I successfully made our first batch of beer


 Had a Fabulous Birthday Party

Celebrated my Aunt's wedding in Florida

Adventured to Penn State for Kate's bachelorette party




Traveled to Charleston, SC for K & B's wedding

Ran ( in a relay) the Pittsburgh Marathon


Visited my family on Long Beach Island


Attended Pirates Games ( maybe next year bucs!)






Vacationed in Lake Erie with DFH

Went to my first Polo Match


      
Celebrated Rob and Chelsea's wedding in New Jersey

DFH and I visited my grandparents in the Adirondacks

Attended my 5 year college reunion at Elon. (makes me feel old)





Celebrated Halloween as a Peacock

Finished the Turkey Trot with my Mom


DFH and I got our first Christmas Tree together




Can't wait to see what 2012 will bring!

Holiday Blues

   I hate how each year after all the hype, and the hustle of getting ready for the holidays for months, they are over.  The music stops, the decorations are down, and you start seeing Valentines Day decorations in all of the stores...ughhh. 

      DFH and I have decided were not quite ready to take down our Christmas Tree, there's something so nice about looking at Christmas decorations and lights, that we are going to ride the holidays for another week and enjoy our holiday decs.

  As much as I now feel a little of the holiday blues now that holidays are over and it is cold and gloomy in Pittsburgh,  I had a wonderful Christmas in New Jersey with family and friends and a great New Years Eve. 


I enjoyed having a wonderful Mother-Daughter Luncheon with my Mom's "Napa Girl" friends

Loved celebrating Christmas and all of our traditions at home.


Had a blast celebrating New Years Eve with DFH and our out of town visitors.




Also loved celebrating with my Pittsburgh favorites.
